Microgreens - Innovation for Nutrient Enhancement in Current Global Scenario

Microgreens, often referred to as “vegetable confetti,” are young, tender seedlings of edible plants that have gained popularity in recent years due to their vibrant color, flavor, and nutritional profile. In the context of changing dietary patterns and fast-paced lifestyles, microgreens offer a promising alternative to traditional vegetables, especially for individuals seeking convenient yet nutrient-rich food options. The present study investigated the nutritional composition of selected microgreens, focusing on their mineral content, vitamin levels, and phytochemical profile. Lettuce microgreens were cultivated under controlled conditions and analyzed for macro- and micronutrient content using standardized methods, including wet digestion for trace element analysis. The results revealed that lettuce microgreens contained significantly higher concentrations of essential minerals such as calcium, magnesium, iron, manganese, zinc, selenium, and molybdenum compared to their mature counterparts. These mineral levels remained stable despite variations in soil properties. In addition, high levels of key vitamins α-tocopherol (vitamin E), β-carotene (pro-vitamin A), ascorbic acid (vitamin C), and phylloquinone (vitamin K1) were observed. Microgreens also exhibited the presence of health-promoting phytochemicals including phenolic antioxidants, anthocyanins, glucosinolates, and carotenoids, supporting their functional food potential. Microgreens serve as a concentrated source of essential nutrients and bioactive compounds, making them a valuable dietary component in modern nutrition. Their superior nutrient density, coupled with ease of incorporation into meals, highlights their potential as a sustainable and health-promoting food source.
